Caramelized

One can do a lot with caramel.
Bernd Fritzenwallner uses it for art indeed.

Coloured caramelized sugar meets blueberry.
The colour of caramel itself is mind-boggling, a shiny bright green.
Blueberries are caramelized and formed to a needle, which then looks like a pin…fascinating.

Chef Bernd carried on creating the same with olive oil.
Olive oil and caramel? Yes, it really does work. Same thing like before but olive oil instead of a blueberry.
How that works is a good question.
A small funnel with caramel and drops of olive oil is the tool.
The outcome is another needle with olive oil inside.

A special and fascinating idea, which will astound guests for sure.
It is great decoration to present food in an artistic way.

Bernd Fritzenwallner answered the question ‘where did the idea come from?’ with “it just crossed my mind and tried if it would work.”

Great taste and great ideas are to be experienced at “der Abtenauer”.
